Here is the best simple recipe of Umaj Halva:

Ingredients for 3-4 persons:

White flour4 Cups
Sugar600 grams
Water2/5 Cups
Oil1 Cup
Milk110 CC
cardamom powder1/2 Teaspoon
Brewed saffron or turmeric3 Spoon
Rose water1/4 Cup
Butter100 grams
Salt1/4 Teaspoon

First step:

Use a big tray and add flour and salt into it. Mix them well by your hands until they are uniform.

Then add 3-4 tablespoons of oil and mix it well.

Second step:

Add milk little by little till you see the flour with milk form balls, when the balls formed, stop adding milk. Next, mix the flour with milk by mixer till you see the balls disappear.

If you don`t have mixer, you can sift the flour.

Third Step:

put a medium size pot on the oven and add sugar and water. let the pot boil for 10 minutes and sugar dissolves in water completely.

Fourth step:

Put a medium size pan on the oven and hit it up. Add the prepared mixture of flour and milk to the pan.

Stir it till the flour turns to paste form.

Golden point: Stir the flour so that it does not burn.

Fifth step:

After mixing the flour for 15 minutes, add butter to the pan. It makes our mixture to be loose and smooth. In this case, you should stir the mixture for another 15 minutes with low heat. 

Then turn off oven and let the pan cool down for 5 minutes

Six step:

Add syrup to the pan and stir Halva continuously.

Add cardamom powder along with rose water and saffron to it. continue mixing it for 2 minutes after adding all mentioned ingredients.

Seventh step:

At this step, our halva maybe loose, but there is no worry for it.

Solution is, putting it again for 5 minutes and stir it continuously until it turns to stiff texture.

Umaj Halva is ready.

You need to serve it in a beautiful Persian style dish and for decoration ,you can use pistachio slices.
