Here the best simple recipe of Traditional Iranian ice cream (Bastani sonnati) :

Ingredients (for 2-3 persons):

full fat milk4 cups
Sugar1 and half cups
Rosewater1/3 of cup
Salep2 teaspoon
brewed saffron 1 spoon
pistachio slices2 spoon
cream (Breakfast cream)1 spoon
Ingredients

First step:

Mix sugar and salep . Put  a medium size pot on the oven and add the milk into it. the heat should be gentle ,wait till milk boil, then add mixture of sugar and salep. Try to mix them well .

Second step:

Add rose water and saffron to the pot, mix ingredients well for 30 seconds.

Turn off oven and let the mixture cool down.

Third step:

When the mixture inside the pot cooled down completely, pour it into a steel bowl, then put it in refrigerator for 2 hours .then bring out the steel bowl. Till this step, ice cream is almost ready.

Fourth step:

Stir freezed ice cream with electric blender with low speed for 1 minute.

Put ice cream back into refrigerator for 30 minutes.

Bring out ice cream and stir it again for 1 minute with electric mixer with low speed.

Fifth step:

Repeat step 4 for 7-8 times.

Six step:

Pour breakfast cream on parchment paper, spread it and put it in refrigerator till it becomes hard layer- usually 1 hour is perfect to see a good hard layer of cream.

Then, break the cream layer by a small hammer or spoon .and add pistachio slices on it. then put the cream slices with pistachio slices on ice cream.

Seventh step:

Bring back ice cream with cream peaces on it to the refrigerator for 12 hours.

Bring out the ice cream, Traditional Iranian ice cream is ready.
