Ingredients:

White flour2 Cups
Sugar1 Cup
Oil2/3 of cup
rose water1 Tablespoon
Brewed saffron1 or 2 Tablespoon
cardamom powder1/3 of tablespoon

First step:

Preparation of Halva syrup:

Boil 0.5 liter of water.fill out a medium measuring cup with it .Use 1 or 2 spoon saffron, add it to boiled water in the cup. then cover the cup with a lid or a plastic cover and let the water takes all saffron taste. Then, bring a medium size pot and put it on stove with power 7-8 (if the scale of your cooking oven has 10 grades). Add 1.5 cup of water and let it boil. Next, add rose water, sugar, cardamom powder to the pot. Use a long plastic spoon to mix ingredients with boiling water, finally add saffron which you let it brew. Let the mixture boil a bit more and turn off the oven.Keep in mind, not to boil mixture for a long time.it shouldn’t have a tough texture.

Second step:

Fry the flour:

Put a medium size frying pan on stove , add oil into it.

I highly suggest you to add a small cube of butter into oven (My personal experience for you).

You need to warm up oil, but not to the level in which the oil be very hot, also keep the temperature of oven in medium intensity. then add the flour into it. fry the flour in the oil till you see the color of flour be creamy .

Note that you need to add the flour little by little and mix the flour and oil continually with a woody long spoon. Don’t leave the flour without mixing.

Reasons:

1-Flour will attach to the base of pan.

2-Flour will change to black color quickly.

3-if you add all flour at the same time, it is probable that you see separate circular balls of flour.

Third Step:

Add Halva syrup to the fried flour and mix it continuously.

You need to add syrup gradually, and continue mixing for 4-5 min.

Turn off the oven and let Halva cool down for 7-10 minutes.

Fourth Step:

Decoration of Halva can be done by using sliced pistachio, sliced almond, or even coconut powder.
