Here is the best simple recipe of Faloodeh Shirazi:
Ingredients:
Starch | 100 grams |
lukewarm water | 800 ml |
Water | 100 ml |
Rose water | 2 spoon |
Sugar | 140 gr |
First step:
Preparation of Falodeh syrup:
Add 150 ml water and 140 grams sugar into a medium size pot and put it on stove.
Wait till the mixture boil for 4-5 minutes.
After 5 minutes, turn off stove and add boiled mixture to a medium size metal bowl.
Let the mixture cool down for 5 minutes.
Add rosewater. Put the bowl into freezer.
Wait for 4 hours.
Bring out the bowl and smash freezed mixture with a fork or electric mixer. Then put it back into freezer.
Second Step:
Preparation of Faloodeh filed(strings):
Add 400 ml of lukewarm water (half of what I mentioned in the chart) into the small bowl and mix it continuously with starch.
Third Step:
Add second half of warm water(400 ml) into the medium size pot and let it boil.
At the same time prepare a medium size bowl and add ice and water into it(1 liter water).
while the water in the pot starts to boil, add the mixture of water with starch(from step 2) into it, and continuedly mix it till you have semisolid texture.
When the mixture turned into semisolid, turn off the oven and continue mixing it for 2 minutes.
Fourth Step:
Transfer all semisolid mixture into confectionary funnel instantly and insert the tip of funnel to the bowl in which you added ice and water.
Press the funnel and the semisolid mixture should appear as stiff strings in the water.
Press the funnel till all content of it evacuates.
Fifth Step:
Bring out all stiff strings and put them in the pot that contains the syrup.Bring the pot into freezer again.
Last Step:
Add lemon juice or cherry juice or raspberry jam into the pot and divide the mixture into small bowels.
